GET/v1/datasets

List all available Eurostat datasets

Return a list of every Eurostat dataset currently loaded into EurostatAPI. Use this as the discovery entry point to see which thematic areas (GDP, inflation, unemployment, etc.) are available and how fresh the data is. **Response shape:** each item is a `DatasetSummary` with the Eurostat dataset code, human-readable name, category, update frequency, and observation count. Source: Eurostat SDMX 2.1 API. Required scope: `eurostat:read`.
